Identification of manchego cheese
In terms of the exterior appearance, it has a lattice on the flat sides and lines that divide it into four parts. Its colour is natural and depending on its curing time, it has different shades that may vary from ivory to brown.
Also, an authentic Manchego cheese incorporates on the back of the cheese the casein tab recognizing its Denomination of Origin.

The external appearance, in terms of crust and colour is the same as mentioned above. If we study its interior, the cheese should have a colour that will go from white to ivory depending on its maturity.
The cheese should have a homogeneous appearance and where cut it can be either smooth or with small holes that are spread randomly across the surface.
